Rib Rub

This is a good rub for ribs. Add some salt to it, and you can rub it on chicken for grilling, and that will replace brining.

  • 2 Cups Brown Sugar
  • 1/4 Cup Italian Seasoning (you may substitute Oregano if that's what you have)
  • 1/8 Cup Hot Paprika (if you like a milder rub, use mild paprika)
  • 1/8 Cup Chili Powder
  • 2 Tablespoons Garlic Powder (or granules. NOT garlic SALT)
  • 1 Tablespoon Ground Black Pepper
  • 1 teaspoon Cinnamon

Mix all ingredients in a bowl. Makes enough to do 6 St. Louis style rib slabs. This will keep in a closed container, but make sure that you don't rub it on the ribs, then reach into the container with those same porky hands. Pull enough out into a separate bowl so you don't contaminate the main container.
