This is NOT the perfect Salmon Patty, but if you are on a low carb diet, it is very good.
Beat the eggs, salt, pepper, hot sauce and Worcestershire sauce in a bowl. In another bowl combine all other ingredients until mostly combined. Add the eggs and stir to combine, but not so much that it gets mushy.
Heat a frying pan over medium heat and add about a Tablespoon of olive oil, heating until the oil shimmers. Using an ice cream scoop or disher, scoop patty material into pan, then flatten out to make a patty. I get about four to a recipe.
Allow to cook until browned on the bottom, about 3 minutes, then carefully turn it over using a spatula and a fork. Brown and serve.
I just weighed the salmon coming out of a 10 oz. can. It was a little less that 7 oz. The recipe works, but I changed the amounts.
