This works for approx 2 1/2 pounds of pork, lamb or chicken.
To marinate the meat
The sauce
For serving 1 Cup coarsely chopped fresh cilantro
Lay the meat in a single layer and pour the lime juice over it. Marinate at room temperature for 20 minutes, flipping the meat twice.
To make the sauce, put all of the ingredients in a blender and puree until smooth. Divide in half, one for cooking, the other for serving or another use later.
Oil and season the meat. Grill for a few minutes. Turn the meat and brush the now seared upward facing side with the sauce. Continue cooking until done (noting that there will be carry over cooking).
Put the meat on a platter, sauce side down and brush sauce on the other side. Sprinkle on chopped fresh cilantro.
