North Carolina Style Sauce

  • 1 Cup cider vinegar
  • 1/4 Cup light brown sugar
  • 1 Tablespoon dried red chile flakes
  • 1 Tablespoon water
  • 1 Tablespoon fresh ground pepper
  • 1 3/4 teaspoons kosher salt

Open the windows...vinegar and hot pepper flakes gonna get you. Combine all the ingredients in a saucepan and bring to a simmer, only until the sugar and salt are dissolved. The sauce will be thin.

Swab the sauce on pork while it slowly grills. You can then splash it on the final dish as you serve it.
