Indian Corn Pudding

When you want a quick, cheap, warm, easy dessert on a chilly fall or winter evening, this is tough to beat. Not too sweet comfort food.

  • 1 egg, lightly beaten
  • 1/2 cup cornmeal
  • 2 Tablespoons cornstarch
  • 1/2 cup brown sugar (light or dark)
  • 1 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 4 Cups milk, scalded

Preheat oven to 350. Butter a casserole or baking dish. Mix all ingredients, except milk, in a saucepan or saucier to combine. While stirring, slowly add the milk and then cook over medium heat until it begins to thicken. Pour mixture into baking dish and bake for 40 minutes.

Options

  • Slice one cup of apples and heat in a saucepan with 1 Tablespoon of brown sugar, 1 teaspoon of butter and 1 Tablespoon of water until apples are beginning to soften. Put in the bottom of the baking dish, then pour the corn pudding mixture on top. Bake 30 minutes as above.
  • Whipped cream, cinnamon, a little brown sugar on top is very nice.
